¼ cup silver tequila
1 tablespoon triple sec
2 tablespoons freshly squeezed lime juice
1½ tablespoons Asheville Bee Charmerâs Firecracker Hot Honey
1 teaspoon kosher salt
1 clove garlic, minced
8 skin-on, boneless thighs, trimmed of excess fat
2 tablespoons grapeseed oil
To make the marinade, whisk together the tequila, triple sec, lime juice, honey, salt, and garlic in a small bowl. Place the chicken in a gallon-sized zip-top bag. Add the marinade and coat the chicken well. Seal the bag and let the chicken marinate at room temperature for 1 hour.
Preheat the oven to 350°F.
Heat the oil in a large ovenproof sauté pan over medium-high heat until itâs hot but not yet smoking. Wipe off the excess marinade from the chicken and discard the marinade. Add the chicken thighs to the sauté pan, skin-side down, and sear for 3 to 4 minutes, or until golden brown. Flip the chicken and cook for another 3 to 4 minutes.
Transfer the pan to the oven and bake the chicken for 20 minutes, or until an instant-read thermometer registers 165°F when inserted into the thickest part of a thigh. Remove the pan from the oven and let the chicken rest for 5 minutes before serving. Store leftover chicken in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.
